Pork Chops and Peaches

Summer Sunday Night Menu: 
Pork Chops and Peaches + Twice Baked Red Potatoes
Caramelized Bananas and Vanilla Ice Cream
I've been enjoying fresh summer produce, like Texas blueberries and peaches!  
I had the idea to pair fresh peaches with pork chops for dinner last Sunday night.  
We had peaches. We had butterflied pork chops.  Seemed like a perfect pair.
I've been watching too much Food Network and Chopped.  
FYI - Chef Cory Bahr from Monroe, LA was the Chopped champ on a recent episode.  
I am looking forward to trying out Restaurant Cotton someday on a visit to Louisiana. 
First saute salt/pepper seasoned pork chops on medium/high heat with butter and olive oil. 
Remove the pork chops from the pan after they are well done and golden brown.

Then add a tiny bit of butter to the same pan.
Toss in fresh peaches, a pinch of brown sugar and a pinch of salt. 
Brian was a little skeptical of the peaches at first,
but he ended up loving it and went back for more peaches for each bite!
I've also made a variation using fresh apples - just add a splash of apple juice and cinnamon!

  1. Yum! This looks delicious! I've made an apple version too, but peaches are beautiful and in season right now! What a great idea! (Just FYI - the apple one works really well in the crockpot...I think the peaches are too delicate for the slow cooker!)
